Superfood Blueberry Smoothie
I've made a lot of smoothies in my day. This was hands down one of the best smoothies I've ever tasted - the combination of flavours is perfect!
So, what makes a good smoothie? We spent a lot of time at the Matthew Kenney Culinary Academy learning about how to properly balance flavours. We started with making nut milks, learning how to add salt and coconut oil to bring out the most from the different options.
For smoothies, we learned about the 4 key components:
- the base
- the core
- enhancers/superfoods/special seasonings
Getting this balance right is what differentiates a good smoothie from a great one. What kind of fruit are you using? Is it sweet/acidic/salty? What is in season (ie: will have more flavour). Is it fresh or frozen? What about your liquid - are you using milk? frozen yogurt? What superfood or special flavour to do you want to add? Maca? Bee pollen? Do you want it sweet, adding maple syrup/honey/agave? Or do you want it tart, like green apple or with fresh greens? Consistency matters! It was really fun learning how to think through each component, finding the right balance.

Blueberries • Banana• Nut Milk • Honey • Hemp Seeds • Bee Pollen.
You simply blend and enjoy. The berries and banana are best frozen, to get a nice, cold smoothie. The trick with superfood is to only pack your smoothie with one or two, to get the most out of them. I don't mean in terms of nutrient absorption, but in terms of just enjoying them for their individual flavours. You only need 1-2 spoonfuls of hemp seeds, or a sprinkle of bee pollen, for example. That's plenty!
